Greek Salad Recipe


A greek salad makes a wonderful side dish for any barbeque meat. It has a wonderful acidic flavour cutting the olive oil.

Here's a simple recipe that makes a great salad in minutes. If you have no romaine, you can use other lettuce leaves.

Ingredients

1 cucumber, chopped
2 plum tomatoes, chopped
1 red bell pepper, chopped
1/2 red onion, thinly sliced
150 g pitted kalamata olives
125 g brine-cured black olives
100 g feta cheese, crumbled
300 g romaine lettuce
salt and pepper optional


Directions

Add chopped romaine, sliced red onion, red bell pepper, cucumber, tomato, olives, and feta cheese, to large serving bowl. Top with olive oil dressing.

Dressing

6 tbspn olive oil 

1 tspn garlic powder 

1 tspn dried oregano 

1 tspn dried basil 

1 tspn dijon mustard 

1 tspn lemon juice 

3 tbspn red wine vinegar

In a bowl, whisk olive oil, garlic powder, dried oregano, dried basil, Dijon mustard, fresh lemon juice, and red wine vinegar.
