Low Carb Zucchini Pancakes

Zucchini Pancakes

Easy to make with this simple recipe!

Ingredients

1 medium onion
1 medium zucchini
1 large egg
2 tbsp butter
pepper
salt

Directions

Fry the onion in butter until translucent, not brown. Grate unpeeled zucchini. Whisk egg, add onion, zucchini, salt, pepper, and mix well. Heat butter on medium heat and scoop mixture into pan. Fry until golden browned, flip over to brown other side.

Serve with sour cream.
