Authentic Chilli Con Carne Recipe

Texas Chilli - No Beans


4lbs Silverside/Round beef, trimmed and cubed (not minced or ground)
1 large onion, chopped
1 clove garlic, minced
1 400g can chopped tomato
3 fresh jalapenos, chopped
1 500ml water
2 tbspn chilli powder
2 tbspn cumin
1 tspn pepper
1 tbspn salt
cooking oil


Cut the beef into approx. 1 inch cubes
Brown the cubed meat in a large chilli pot
In a fry pan with oil soften onion and garlic
Add tomato sauce, water and the rest of the ingredients to the chilli pot and stir well
Simmer very gently on lowest setting with the lid on for four hours, adding more water (or tomato) if necessary
The final thickness should be between a sauce and a stew
Serve with corn chips and green salad


Buy extra cans tomato (I normally buy 3 cans)
Taste after 2 hours cooking and adjust flavour by adding more cumin and chilli
Taste after 3 hours cooking and adjust flavour again if necessary
